A cucurbit from the highlands of ethiopia. Traditionally prepared in over 30 dishes, the starchy tubers are eaten as well the new tender shoots. Roots are compared to carrorts and potatoes. Plants can handle intense heat and temps below freezing. Fruit are highly ornamental but saponific (soap like). But perhaps you could use the fruit as shampo. Very fast growing plant never stops growing in zone 9. tuber continuously expands each year to very large size but best when eaten in the 1st or 2nd year.
